Ingredients

Scale
  • 500g / ½ a chicken, cleaned and cut into small pieces
  • Curry chicken powder
  • 6 cloves red onion
  • 2 cloves garlic
  • 15 stalks dried chillies
  • 1 stalk lemongrass
  • 300ml coconut milk
  • 2 potatoes, cut into quarters
  • Lime leaves, thinly sliced, as garnish
  • Water
  • Salt and sugar, to taste
  • Cooking oil, to fry chicken and potatoes

Instructions

  1. Heat a frying pan and fry chicken until half-cooked. Same with the potatoes, fry until half-cooked.
  2. In a pot, heat up cooking oil, add in onion, garlic, dried chilli and stir until fragrant and crisp.
  3. Add in the coconut milk and stir for a while. Add in the chicken and potatoes, continue mixing.
  4. Add in enough water, and mix until it boils or gravy thickens.
  5. Turn off the heat and serve. Garnish with lime leaves.
