Curry chicken (Indian Style)

Ingredients

Scale
  • 3 onions
  • 4 cooked chillies
  • 10 bird’s eye chillies
  • 4 stalks curry leaves
  • 1 tbsp garlic, mashed
  • 1 tbsp ginger, mashed
  • 1 ½ tsp turmeric powder
  • 3 tbsp chicken / meat curry powder
  • 1 potato
  • 1 tomato

 

Oil for sauteing

  • 6 cardamom buds
  • 2 star anise
  • 1 stick cinnamon
  • 6 cloves
  • 500g / ½ a chicken

Instructions

  1. Saute the 4 spices until fragrant
  2. Add in the onion and curry leaves, saute until golden and fragrant.
  3. Add in chilli and stir for a while.
  4. Add in chicken and turmeric powder and mix well.
  5. Add in ginger and garlic, stir until chicken is half-cooked (do not add water).
  6. Add in curry powder and just a little bit water. Cook until the oil separates.
  7. Then add enough water and add in tomato, potato and salt to taste.
