Curry chicken (Indian Style)

Ingredients

- 3 onions
- 4 cooked chillies
- 10 bird’s eye chillies
- 4 stalks curry leaves
- 1 tbsp garlic, mashed
- 1 tbsp ginger, mashed
- 1 ½ tsp turmeric powder
- 3 tbsp chicken / meat curry powder
- 1 potato
- 1 tomato
Oil for sauteing
- 6 cardamom buds
- 2 star anise
- 1 stick cinnamon
- 6 cloves
- 500g / ½ a chicken
Instructions
- Saute the 4 spices until fragrant
- Add in the onion and curry leaves, saute until golden and fragrant.
- Add in chilli and stir for a while.
- Add in chicken and turmeric powder and mix well.
- Add in ginger and garlic, stir until chicken is half-cooked (do not add water).
- Add in curry powder and just a little bit water. Cook until the oil separates.
- Then add enough water and add in tomato, potato and salt to taste.
