Anchovies sambal

Ingredients

- 1 handful anchovies
- 1 large onion, sliced
- 3 cloves garlic, sliced
- 1 stalk lemongrass, bruised
- 2 tbsp Arun Chilli Powder, mixed with water to form a paste
- 2 tbsp oyster sauce
- 1 tbsp tomato sauce
- Salt and sugar to taste
Instructions
- Heat oil and fry anchovies until crisp. Set aside.
- With the same oil, saute onion and garlic until fragrant.
- Add in the chilli paste, cook until crisp. Add a little water and mix well. Add in the lemongrass.
- Add in the oyster sauce and tomato sauce. If you prefer a little broth, add more water.
- Once the chilli paste and sauce are well-blended, season with salt and pepper if necessary.
- Add in the fried anchovies. Mix well.
- Ready to serve.
