Anchovies sambal

Ingredients

Scale
  • 1 handful anchovies
  • 1 large onion, sliced
  • 3 cloves garlic, sliced
  • 1 stalk lemongrass, bruised
  • 2 tbsp Arun Chilli Powder, mixed with water to form a paste
  • 2 tbsp oyster sauce
  • 1 tbsp tomato sauce
  • Salt and sugar to taste

Instructions

  1. Heat oil and fry anchovies until crisp. Set aside.
  2. With the same oil, saute onion and garlic until fragrant.
  3. Add in the chilli paste, cook until crisp. Add a little water and mix well. Add in the lemongrass.
  4. Add in the oyster sauce and tomato sauce. If you prefer a little broth, add more water.
  5. Once the chilli paste and sauce are well-blended, season with salt and pepper if necessary.
  6. Add in the fried anchovies. Mix well.
  7. Ready to serve.
